chocolate chunk granola bars {gf,v}

What a gorgeous weekend we had here in east tennessee. 70's and sunny both days. 
Our daffodils, asters, and crocuses are in bloom...spring is soooooo close I can feel it in my bones. 
This makes me soooooo happy. so incredibly happy.

We spent the weekend at the farmers market sampling local goodies, the dog park getting dirty and tired (both us and the dogs), and with friends grilling out and relaxing by the fire.
I feel immensely grateful for happy little moments like these.

As the weekend drew to a close, we decided to head into the kitchen and try making a new treat, sans recipe, and just see what happened. These chocolate chunk granola bars happened. And they're kind of amazing. The perfect combo of sticky, crunchy, salty, & sweet. Yet another reason to be happy.

chocolate chunk granola bars
{gluten free, vegan}

*2 cups gluten free quick oats
*1 cup shredded coconut
*1 tsp cinnamon
*1/2 cup cashews
*1/2 cup almonds
*1/4 cup melted coconut oil
*1/2 cup agave
*1 tsp vanilla
*1 tbsp molasses
*3/4 cup vegan chocolate chunks
*sprinkle of sea salt

1. Preheat the oven to 350.
2. Add the oats, coconut, cinnamon, nuts, and chocolate chunks to a large bowl and mix.
3. In another bowl mix the oil, agave, vanilla, & molasses.
4. Add the wet ingredients to the dry and mix.
5. Line a 8 x 8 pan with parchment paper and press the granola evenly into the pan. Sprinkle with a light dusting of sea salt.
6. Bake for 20 minutes or until edges brown.
7. Cut into desired size and place the pan into the freezer for 20 minutes to set.

Store in airtight container for up to one week.
