cherry pie bites {gf,v}


 Hello, hello. How is everyone today? Spring is definitely in full swing here. The green sprouts of grass and opening blooms are an extremely welcome sight (despite my protesting allergies).

Today's recipe is an easy one. But don't let the fact that there's only 5 ingredients fool you; together they pack a big punch. It's a medley of lightly sweet and perfectly tart, resulting in a fab cherry pie favor without any added sugar. I think Arik's exact words were, "it's like heaven in my mouth." Yeah, it kinda is. 
Except in heaven I'm pretty sure the dirty bowls and measuring cups clean themselves.

cherry pie bites
{gluten free, vegan}

{{{INGREDIENTS}}}
*1 cup raw almonds
*1 cup unsweetened, dried cherries
*7-8 medjool dates, pitted and chopped
*1 tsp unsweetened cocoa powder
*3/4 cup shredded coconut

{{{DIRECTIONS}}}
1. Add almonds to food processor or chopper until finely ground. (You can also use 3/4 almond meal and skip this step).
2. Add the remaining ingredients to food processor until mixture begins sticking together.
3. Roll into 2-3" balls.

Store in airtight container for up to 5 days. Makes 12 bites.
