chewy oatmeal raisin cookies {gf,v}



Hello hello. You're all in for a treat today. A chewy, sweet & spicy, delicious treat. These are sooooooo good. If I'm going to have dessert, I usually want some kind of chocolate involved. I can't believe I'm about to say this, but...I'd forgo chocolate for these. They're that good. The only problem: it's impossible to eat just one. Luckily they're good for you, so who cares? 
Grab 2 or 3 or a handful and enjoy.

chewy oatmeal raisin cookies
{gluten free, vegan}

{{{INGREDIENTS}}}
*1-1/2 cups gluten free oats
*1/2 cup almond flour
*1/4 tsp salt
*1/2 tbsp cinnamon
*1/4 tsp nutmeg
*1/4 tsp ginger
*1 tsp baking powder
*1/2 cup applesauce
*2 tbsp coconut oil, melted
*3 tbsp maple syrup
*2/3 cup raisins (we used golden and they were delish!)

1. Preheat the oven to 350.
2. Mix the oats, almond flour, salt, & spices in a large bowl.
3. Add the applesauce, oil, maple syrup, and raisins to a smaller bowl and mix.
4. Fold the wet ingredients into the dry. Don't over mix. Let the batter sit for 5 minutes.
5. Drop by the spoonful onto parchment paper lined (or greased) cookie sheet.
6. Bake for 17-20 minutes or until edges turn golden.
7. Let cool for 5 minutes before transferring to cooling rack.

Makes 15 cookies. Store in airtight container for up to one week.
