chocolate chip pumpkin cookies {gf,v}


It's pretty much pumpkin-polooza over here. So bear with me the next few weeks as I throw pumpkin into every dish/meal/baked good (until I get sick of it upon which you will not see another pumpkin recipe for another year). These are super healthy little treats. I used applesauce instead of oil or butter and they still taste delish. There are only a couple ingredients, but a big pumpkiny/spicy taste.

chocolate chip pumpkin cookies 
{gluten free, nut free, vegan}

{{{INGREDIENTS}}}
*1-1/2 cups gluten free quick oats
*1 tsp baking soda
*1/2 tbsp cinnamon
*1 tsp pumpkin pie spice
*1/4 tsp salt
*1/3 cup pumpkin
*1/3 cup applesauce
*1/3 cup agave
*1 tsp vanilla
*1/2 cup chocolate chips

1.Preheat the oven to 350.
2.In a large bowl mix together the dry ingredients.
3.In another bowl mix together the wet ingredients.
4.Add the wet ingredients to the dry.
5.Fold in the chocolate chips.
6.Drop by spoonful onto greased cookie sheet.
7.Bake for 12-14 minutes or until edges brown. 

Store in airtight container for up to 5 days. Makes 18 cookies.
