apple pumpkin butter {gf,v}


OK, let's keep obliging my pumpkin obsesh, shall we? This is an amazing put-it-on-everything butter. We make this every year, and I really can't get enough of it. I put it on toast, oatmeal, cookies, rice cakes, you name it, it gets slathered in this butter. Luckily, it's healthy...there's no dairy, gluten, or any other naughty stuff. So slather away friends. slather. away.

apple pumpkin butter
{gluten free, vegan}

{{{INGREDIENTS}}}
*1/3 cup water
*1/3 cup raisins
*2 cups canned pumpkin
*1 cup applesauce
*1/2 cup agave
*2 tbsp cinnamon
*2 tsp pumpkin pie spice


{{{DIRECTIONS}}}
1.Add raisins and water to small saucepan over medium heat until raisins plump.
2.Remove rasins and water and place in blender on low until pureed. 
3.Place raisin mixture back into saucepan and add remaining ingredients. 
4.Reduce heat to low for one hour, stirring occasionally.

Store in fridge for up to 2 weeks. Makes approx 3 cups.
