double chocolate peanut butter cookies {gf,v}


These were quite the Sunday afternoon experiment. Lots of pouring, stirring, adding a little of this and a little of that, and lots of giggling. It was kinda like science class (minus the giggling). First we had powder, then soup, and finally we stumbled across the perfect combination of ingredients. I wasn't sure how the coffee would be in the mixture, but it adds a nice richness to the cocoa and peanut butter. These are the perfect partner to your mid morning cup of coffee. Aaaaand they're healthy, gluten-free, vegan deliciousness. Not too shabby for a girl who never liked science.

double chocolate peanut butter cookies
{gluten free, vegan}

{{{INGREDIENTS}}}
*2 cups gluten free oats
*1 cup gluten free all purpose flour
*2 tbsp cocoa
*1 tsp baking powder
*1/3 cup melted coconut oil
*1/2 cup peanut butter
*1 tsp vanilla
*1/4 tsp salt
*1/4 cup honey
*1/2 cup coffee
*1 cup chocolate chips

{{{DIRECTIONS}}}
1.Preheat the oven to 350.
2.Mix the oats, flour, cocoa, baking powder, and salt in a large bowl.
3.In another bowl add the rest of the ingredients except the chocolate chips.
4.Add the wet ingredients to the dry.
5.Fold in the chocolate chips.
6.Drop by spoonful onto greased cookie sheet.
7.Bake for 12-14 minutes or until the tops of the cookies are lightly browned.
8.Let cool for 3-5 minutes before transferring to cooling rack.
9.Store in airtight container for up to a week.

Makes 2 dozen cookies
