chocolate + coconut cupcakes {gf,v}


If you're looking for a rich, chocolaty, dense and delicious cupcake (and who isn't), these are it. The texture kind of reminds me of those hostess cupcakes with white squiggleys...only you can pronounce all the ingredients in these. (always a bonus)

chocolate + coconut cupcakes
{gluten free, vegan}

{{{INGREDIENTS}}}
*1-1/2 cup gluten free all purpose flour
*1/2 cup cocoa
*1-1/2 tsp baking soda
*1/2 tsp salt
*1/2 cup coconut oil, melted
*1 tsp vanilla
*1/3 cup agave
*1 tbsp apple cider vinegar
*1 cup coconut milk (I used vanilla) 
*1 cup shredded coconut (plus a little extra for topping)
*1 cup chocolate chips

1.Preheat the oven to 325.
2.Combine the flour, cocoa, baking soda, and salt in a mixing bowl.
3.In another bowl combine the oil, vanilla, agave, vinegar, and coconut milk.
4.Add the wet ingredients to the dry.
5.Fold in the coconut and chocolate chips.
6.Add the batter to a greased muffin tin & sprinkle with coconut.
7.Bake for 15 minutes or until inserted toothpick comes out clean.
8.Let cool for 5 minutes before transferring to wire cooling rack.

Makes 12 cupcakes
