coconut & cashew bites {gf,v}


Sometimes when I'm running though our super groovy grocery store, Earth Fare (it's like Whole Foods), I'll feel this cosmic pull towards their snacky section. Huge barrels of trail mixes, nuts, and chocolates call to me. Nestled between the dried mango and organic figs are little containers of date rolls. Sometimes they're rolled in pistachios, sometimes coconut, but no matter their coating, they usually end up convincing me to take them home (psssst, over here! we're delicious. take us with you). So I decided to try making my own version. They turned out delish! And waaaaay cheaper. They're the perfect little snack when you're craving something sweet. The best part: when you're in the privacy of your own kitchen, no one looks at you funny when you're conversing with your food.

coconut & cashew date bites
{gluten free. vegan}

{{{INGREDIENTS}}}
*7-8 pitted medjool dates, chopped
*1/4 cup cashews, chopped
*1/4 cup coconut, shredded
*1/2 tsp cinnamon

{{{DIRECTIONS}}}
1.Place the dates in a food processor until they are soft and sticky.
2.Form 8 small balls with the dates.
3.Sprinkle with cinnamon.
4.Roll in cashews and coconut.

Makes 8 bites
