blueberry banana bread {gf,v}


I hope you all had a fabulous weekend. We did a lot of relaxing. Arik did some brewing, I made some jewelry and watched an unhealthy amount of Pretty Little Liars. 
I realize that show is kinda "tween" but... 
I. Am. Hooked.
(but I'm only on season 3...so don't tell me anything!!!)

In between all the lengthy netflix watching, we did manage to make some delicious eats. Arik cooked a fabulous thai dish, we made a spaghetti squash with homegrown basil & rosemary tomato sauce, and a few desserts including this tasty bread. It's a healthy option for breakfast. or snacks. or dessert. Packed full of fruit, lightly sweet, and the perfect companion to any netflix-a-thon.

blueberry banana bread
{gluten free, vegan}

{{{INGREDIENTS}}}
*2-1/2 cups all purpose gluten free flour
*2 tsp baking powder
*1/2 tsp salt
*3 medium ripe bananas
*1/2 cup shredded coconut
*1/2 cup coconut milk
*1/4 cup melted coconut oil
*2 tbsp raw honey
*1 tsp vanilla
*1/2 cup chopped walnuts
1-1/2 cup blueberries

1.Preheat the oven to 375.
2.Mix the flour, baking powder, salt, & shredded coconut in a large bowl & set aside.
3.In a blender combine the bananas, milk, oil, vanilla, & honey until mixed well.
4.Fold the wet mixture into the dry mixture.
5.When mixed, fold in the nuts and blueberries.
6.Pour into greased 9x5" loaf pan.
7.Bake for 50-60 min or until inserted toothpick comes out clean.
8.Let cool completely before removing from pan.

Store in foil or airtight container for up to one week.
