avocado oatmeal chunk cookies {gf,v}


 Ok, before you turn up your nose at the thought of avocado in cookies, here me out....

THESE ARE AMAZING.
and
YOU CAN NOT TASTE THE AVOCADO.

These were so chewy and crunchy and chocolatey that before the batch was gone, Arik wanted more...and he also declared these were "his favorite." (Not sure if he meant favorite cookie, or dessert, or food of all time, but I'll take any of those as a win.) All the ingredients are gluten free, vegan, and delicious. You're getting a ton of good fats from the coconut oil, walnuts and avocado. I feel like with all the omegas, the batter would also be a good hair mask...but this hasn't been tested because eating cookies is way more fun than having shiny hair.

avocado oatmeal chunk cookies
{gluten free, vegan}

{{{INGREDIENTS}}}
*1 cup gluten free oats
*1/2 cup gluten free all purpose flour (I used bob's red mill)
*1/4 tsp salt
*1 tsp baking powder
*1/3 cup agave
*1/4 cup melted coconut oil
*1/2 avocado, mashed (about 1/2 cup)
*1 tsp vanilla
*1 tbsp cocoa
*2/3 cup walnuts
*2/3 cup chocolate chips

{{{DIRECTIONS}}}
1.Preheat the oven to 350.
2.In a large bowl combine the oats, flour, salt, & baking powder and set aside.
3.In a smaller bowl add the agave, coconut oil, avocado, & vanilla and mix with a hand mixer on medium until well mixed.
4.Add the cocoa to the wet ingredients.
5.Add the wet ingredients to the dry and mix well.
6.Fold in the walnuts and chocolate chips.
7.Add by spoonful to greased cookie sheet.
8.Bake for 14-16 minutes or until slightly brown.
9.Let cool for 5 minutes before transferring to wire cooling rack.

Store in airtight container for up to one week. Recipe makes approx. 15 cookies.
