(2 ingredient ~ no bake) peanut butter cookie bites {gf,v}

Only 2 ingredients? No flour, sugar, or butter? That is correct. Only dates and peanuts, and somehow you end up with a scrumptious little morsel that tastes JUST like a peanut butter cookie. And no baking necessary. I don't know how it works, it just does. Some things are just rainbows, seedless watermelon, a good hair day when it's raining, and these pb cookie bites. 

Don't question the tiny miracles, just be grateful.

peanut butter cookie bites
{gluten free, vegan}

*1 cup peanuts
*10 pitted dates, chopped

1.Place the peanuts in a food processor until finely chopped.
2.Add in the dates until mixture becomes gooey (that's the super technical term).
3.Roll mixture into balls.
4.Store in airtight container for up to 5 days.

Makes 12 bites
