watermelon caprese salad {gf}


Nothing says "summer" like a fresh caprese salad. Instead of the typical caprese {tomatoes + basil + mozzarella + balsamic dressing}, I made a little swap-a-roo. Out with the tomatoes, and in with sweet, sweet, watermelon. 
(deliciousness followed.) 
It's the perfect picnic side dish or savory mid-week snack. Bonus: it's super easy to whip up. Only 5 minutes to sweet, tangy bliss. And isn't it gorgeous? I firmly believe pretty food tastes better. There must be studies somewhere that prove this. 'Til then, I'll trust my belly.

watermelon caprese salad
{gluten free}

{{{INGREDIENTS}}}
*2 cups cubed watermelon
*1 cup cubed mozzarella
*several leaves of basil, torn or cut into small pieces
*1/4 cup balsamic vinegar
*2 tbsp virgin olive oil

{{{DIRECTIONS}}}
1.Add the watermelon, mozzarella, & basil to a serving bowl.
2.In a separate small mixing bowl add the balsamic & olive oil. Gently stir the two together.
3.Drizzle the dressing over the salad.
4.Serve immediately.
