peanut butter + chocolate banana bites {gf,v}


 These are quickly becoming one of my fave summer treats. With bananas, peanut butter, chocolate & coconut, you really can't go wrong. Then you freeze 'em and they kinda taste like a bite sized banana split (only gluten free, vegan, & way healthier). Ok, now that you know how amazing these are we can insert the obligatory "makes you go bananas" joke. (Or I can disclose how every time I spell "bananas" I automatically sing Gwen Stefani's hollaback girl...you know, so I spell it right. To Ms. Stefani: your songs are not only extremely catchy and pleasantly weird but also educational.

peanut butter + chocolate banana bites
{gluten free, vegan}

{{{INGREDIENTS}}}
*2 bananas
*3 oz dark chocolate (I used ghirardelli 86% cacao)
*2 tbsp peanut butter
*coconut for topping (optional)

{{{DIRECTIONS}}}
1.Line a cookie sheet with wax paper.
2.Melt chocolate over low heat on the stove.
3.Meanwhile, chop up the bananas into bite size pieces.
4.Top each banana with a smear of peanut butter (very technical)
5.After the chocolate has melted, dip each banana--pb side down--into the chocolate.
6.Place bite onto the cookie sheet, chocolate side up. Sprinkle with coconut if using.
7.Freeze. Keep in the freezer until ready to serve.

Makes approx 12 bites
