dark chocolate raspberry cream cups {gf,v}


I hope you all had a fabulous weekend. We took advantage of a beautiful, sunny Saturday and planted some flowers & herbs and took a nice little stroll along one of Knoxville's greenways. Sunday was filled with brunch, brewing, and baking. A productive and fun kinda weekend. These raspberry cups were one of the Sunday projects...a  chocolaty, gluten free, vegan project. yum. And aren't they gorgeous? I love the colors. These would be fabulous for a shower or luncheon. The perfect combo of sweet coconut cream and tart raspberries layered atop a rich dark chocolate base. Summer in a cup.

dark chocolate raspberry cream cups
{gluten free, vegan}

{{{INGREDIENTS}}}
*pint raspberries
*2 tbsp agave
*1 can full fat organic coconut milk
*3 oz. dark chocolate (we use endangered species)
*1/4 tsp vanilla
*1/4 cup sugar


{{{DIRECTIONS}}}
1.Open the coconut milk can and place in freezer for 15-20 min. (or if you plan ahead, put it in the fridge overnight)
2.Meanwhile, add the agave, vanilla, and raspberries (set a few fresh raspberries aside to set on top of each cup) to a sauce pan over medium heat, stirring for 5 min. Set aside. 
3.In a separate pan melt chocolate on low heat.
4.Pour the melted chocolate into 8 mini muffin liners. (hint: double up on the liners to support the weight of the chocolate. Swirl the chocolate around until the majority of the liner is covered.
5.Place the chocolate filled muffin liners in the fridge until it hardens.
6.Take out the coconut milk, add sugar and using a hand mixer, mix on high for 2-3 minutes.
7.Place coconut cream mixture in freezer for 5 min.
8.Spoon coconut cream into chocolate cup filling about half way.
9.Spoon raspberry mixture into the center of the coconut cream.
10.Add a raspberry to the top and place cups in the freezer for 10-15 minutes or the fridge for an hour before serving.

Makes 8 cups. Store in airtight container in the fridge.
