{no flour} breakfast cookies {gf,v}


Cookies for breakfast? you ask. Um, cookies all the time...and definitely for breakfast. I reply. Especially if they're these cookies. Bananas, almond butter, nuts, cranberries...all breakfast worthy and delicious. These are more pancake-y than cookie-y, but totally healthy. No flour. No gluten. No animal stuff. Just a whole lotta yumminess. So stack 'em up high and enjoy. No maple syrup required.

{gluten free, vegan}

{{{INGREDIENTS}}}
*2 ripe bananas
*3/4 cup almond butter
*1 tbsp honey
*1/2 cup almonds, chopped 
*1 cup shredded coconut
*1/2 cup dried cranberries
*1 tsp baking soda
*1/4 tsp salt

{{{DIRECTIONS}}}
1.Preheat oven to 350.
2.In a large bowl mash bananas until smooth.
3.Add in the almond butter and honey and mix until creamy.
4.Add the rest of the ingredients and mix well.
5.Refrigerate batter for 10 minutes.   
6.Drop by spoonful onto greased cookie sheet. Cookies will flatten out, so leave 2" or so on each side.
7.Bake for 17-20 minutes, or until browned.
8.Let cool for 5 minutes before transferring to wire cooling rack.
9.Store in airtight container in fridge for up to a week.

Makes approx 15 cookies
