sweets & beets {gf,v}

We are suckers for a good chip in this house. Tortilla, salt & vinegar, bbq...you name it, we've probably tried it. Since we like to indulge in the salty snack quite often, we try to buy the healthiest brands that use all natural and/or organic ingredients and no weird orange color #7 or artery clogging oils. Terra Chips makes a ton of healthy chips...but our favorite has to be their sweet potato & beet chips called "sweets & beets." 
Ok, now I know what you're thinking..."ew." Or maybe "gross" or "no thank you crazy lady." But stay with me here. I'm not normally a huge fan of beets, but something magical happens when you bake them. They morph into this amazingly sweet and savory, crispy masterpiece. And while the sweet potatoes are obviously sweet (it's right in the name folks, they wouldn't lie to us), they become the perfect starchy little companion to the beet. This was our first attempt at making our own, and they turned out every bit as good as Terra's. Just grab a few sweet potatoes and beets, 1 tbsp coconut oil, and a pinch of sea salt. Simple to make, so good...and super sweet. (Did I really just use "sweet" in a pun? yup. nerdy.)

{gluten free, vegan}

*2 sweet potatoes
*3 beets
*1 tbsp coconut oil
*pinch sea salt

1.Preheat the oven to 400.
2.Grease a cookie sheet with coconut oil.
3.Wash the sweet potatoes, and slice very thinly. (we left the peel on...more fiber!)
4.Wash and peel the beets. Then slice very thinly. (be prepared for dyed pink fingers.)
5.Arrange the sweets & beets on the cookie sheet without overlapping and sprinkle with salt.
6.Bake for 17-20 minutes or until crisp. The beets will turn a light pink and the sweets will start to curl and pull away from the pan. (Keep an eye on these towards the end of your baking time. They can go from crisp to burned within seconds!)
7.Let cool for 2-3 minutes before serving.
