oatmeal chocolate chip cookies {gf}

Good + good for you = these cookies. In fact before the batch was even gone, Arik wanted me to make more. They're that good. Chewy, sweet, chocolaty, want-3-in-one-sitting kinda good. The secret ingredient (besides love) is almond butter. It adds a richness without the heavy/artery clogging properties of regular butter. And almond butter just tastes good. Instead of sugar, these have shredded coconut and honey. So you can eat these little treats and feel good about what you're eating. It's all good. literally.


oatmeal chocolate chip cookies
{gluten free}

*2 cups gluten free oats
*1 tsp baking powder
*1/2 tsp salt
*1/3 cup melted coconut oil
*1 tsp vanilla
*1/4 cup honey
*1/2 cup almond butter
*1 cup shredded coconut
*2 eggs
*1 cup chocolate chips

1.Preheat the oven to 350.
2.Combine the wet and dry ingredients in separate bowls.
3.Slowly add the wet to the dry mixing well.
4.Place the batter in the fridge for 5 min.
5.Scoop chilled batter onto greased cookie sheet by the spoonful.
6.Bake for 12-15 minutes, until edges are browned.
7.Let cool for 2-3 minutes before transferring to wire cooling rack.
Store in airtight container for up to a week.

Makes 17-20 cookies.
