coconut bites {gf,v}


I wanted a healthy, little snack that was easy to just grab and go. Enter: coconut bites. Simple, good for you, only a handful of ingredients, and delish. My philosophy is the more tasty, healthy snacks you have to choose from, the better. Then you're less likely to snack on the not-so-great-for-you stuff. Who wants a Twinkies when there are coconut bites laying around? (Ok, I never want Twinkies, so that may be a skewed example...they taste like dirty sponges that sopped up some kind of weird astronaut/space milk.) 
I like knowing exactly what I'm eating too...do you take the time to read all your food's nutrition labels? Yeah, me either. Another reason to make your own snacks. And with all the sneaky gmo bills being passed by the government (Monsanto Protection Act), it's going to be even more important to know what you are putting in your mouth. Not cool. Luckily, making healthy snacks and treats is really easy. Stick with me kids, we've got all kinds of healthy, deliciousness in store.

coconut bites
{gluten free, vegan}

{{{INGREDIENTS}}}
*2 tbsp coconut flour
*1/2 cup almond meal
*1/3 cup cashews
*1/4 cup chopped dates (about 8)
*1/3 cup almond butter
*2 tsp agave
*1 tsp vanilla
*1 cup shredded coconut for coating

{{{DIRECTIONS}}}
1.Place the coconut flour, almond meal, cashews, & dates in food processor.
2.Remove when the mixture becomes crumbly.
3.Add mixture plus the remaining ingredients to a bowl (except coconut) and stir well.
3.Form the mixture into 1-1/2" - 2" balls.
4.Roll each ball into shredded coconut.
5.Store in the refrigerator in airtight container.

Makes 10-12 bites
