chicken & wild rice soup


I managed to catch some kind of bug this weekend. Sore throat. Congestion. Feeling like my head was going to explode. Not fun. So I needed some comfort food. And there's nothing more soothing when you're sick, than homemade chicken soup. This is a bare bones, nuthin fancy, perfect when you're feeling crummy, chicken soup. Knowing all the ingredients are fresh and healthy, somehow adds to its magical healing properties. While this didn't completely cure my cold, it tasted yummy and made me feel all warm and fuzzy on a dreary, rainy weekend. Totally worth it.

chicken & wild rice soup
{{{INGREDIENTS}}}
*2 quarts chicken stock (we like pacific natural foods organic free range chicken broth)
*2 organic chicken breasts
*1 cup carrots, chopped
*1 medium yellow onion, diced
*1 cup celery, chopped
*1 cup dry wild rice
*salt & pepper to taste

1.Place the chicken stock and chicken breasts in slow cooker on high for 2 hours.
2.After 2 hours add the remaining ingredients to slow cooker. Cook for another 2-3 hours.
3.Chicken will easily break apart and veggies will be tender when done.
4.Store in fridge for up to a week.
