baked banana bread oatmeal {gf}

This was a huge hit in our house. And really, what's not to love? Banana bread? good. Oatmeal? good. And not having to fix breakfasts for almost a week? super good. This was so easy to prepare and soooo delish. We made this on a Sunday and just reheated it throughout the week. Arik added a touch more coconut milk and cinnamon before throwing his in the microwave. I like my oatmeal on the dry side (no soupy oatmeal for me), so I didn't add anything, and to me it was perfect. We'll definitely be making this again. Maybe an apple cinnamon or pumpkin pie version...or something with chocolate and/or peanut butter? head exploding.

baked banana bread oatmeal
{gluten free}
*2 cups gluten free oats
*1 cup coconut flakes
*2 tbsp honey
*2 eggs
*1/2 tsp salt
*1 tsp baking powder
*1 tsp cinnamon
*1/8 tsp nutmeg
*1 tsp vanilla
*3 tbsp coconut oil
*2 cups light coconut milk
*2 ripe mashed bananas
*1 cup coarsely chopped walnuts
1.Preheat the oven to 350.
2.Combine the dry and wet ingredients in separate bowls.
3.Grease a 9 x 11 pan and add the dry oat mixture and firmly press down.
4.Pour the wet ingredients evenly over the top, completely saturating the oat mixture.
5.Cover the pan with foil and bake for 20 minutes.
6.Remove the foil and bake another 15 minutes or until edges brown.
Serve warm or refrigerate and reheat as needed. Keeps for approx. one week.
Makes approx. 9 servings.
