trail mix bread {gf}

This bread is da bomb. (What? People stopped saying that 20 years ago? I don't care. I'm bringing it back just for this bread.)  DA. BOMB. I started out making a simple banana bread and then decided to get a little cray cray (What? "cray cray" was so 2012 and So Raven? I'm officially old.)  
I had some walnuts, raisins, and coconut to use into the mixture they all went. Dried cherries, chopped almonds, cinnamon, honey...yup, all in. And the results were so so good! A little sweet. A little tart & crunchy. Like a bag of trail mix and a loaf of banana bread had a baby. A beautifully healthy and delicious bread baby. Ok, yup, I need some sleep. I'm ending this post before it gets any more strange. You're welcome.
trail mix bread
{gluten free}
*1/3 cup melted coconut oil
*1/3 cup honey
*2 eggs
*1 tsp vanilla
*3 medium super ripe bananas
*1 cup coconut milk
*2-1/2 cups gluten free all purpose flour (I use Bob's Red Mill)
*1-1/2 tsp baking powder
*1 tsp baking soda
*1 cup shredded coconut
*1/2 tsp salt
*1/2 tsp cinnamon
*1/2 cup chopped walnuts
*1/2 cup chopped almonds
*1/2 cup raisins
*1/2 cup dried cherries

1.Preheat the oven to 350.
2.Combine the first 6 ingredients in a large bowl, mashing the bananas until batter is well mixed.
3.Combine the rest of the ingredients in a second bowl.
4.Fold the wet ingredients into the dry until mixed.
5.Pour batter into greased 10" loaf pan.
6.Bake 55-60 min or until inserted toothpick comes out clean.
7.Let cool for 10 minutes before transferring to wire rack.

This is the perfect mid-morning-eat-it-with-your-third-cup-of-coffee bread.
