chocolate chunk cookies {gf}


 These were the second attempt at making a coconut flour cookie. The first wasn't pretty. Luckily, I have a husband that likes to taste test (and "take care of" any rejects). I was craving something ultra rich and ooey gooey. This second time around, mission soooo accomplished. I think the trick to working with coconut flour is making sure you have plenty of wet ingredients. Otherwise the consistency becomes super dense/dry/crumbly/weird. It's a tricky little flour...especially if you are trying to avoid a ton of butter, sugar, etc. But my persistance payed off because these were awesome. Super chocolaty, crunchy, chunky...did I say chocolaty? The perfect companion to your cup of joe, or latte, or skinny double mocha frappuccino. Chocolate cravings, you've met your match.

{gluten free}
 
{{{INGREDIENTS}}}
*1 cup gluten free quick oats
*1/3 cup coconut flour
*1/3 cup honey
*1/3 cup melted coconut oil
*1/3 cup almond butter
*1 tsp vanilla
*2 Tbsp cocoa
*1 tsp baking soda
*1/4 tsp salt
*2 eggs
*2/3 cup chopped walnuts
*2/3 cup chocolate chips

1.Preheat the oven to 350.
2.Combine the oats, coconut flour, cocoa, baking soda, and salt in a large bowl.
3.In a second bowl, microwave the honey, coconut oil, and almond butter until melted.
4.Combine the vanilla and eggs to the liquid mixture.
5.Add the liquid mixture to the dry ingredients.
6.Add the walnuts and chocolate chips.
7.Drop by spoonful onto greased cookie sheet.
8.Bake for 12-15 minutes.
9.Allow to cool for 3-5 minutes before transferring to cooking rack.
 
Makes approx 15 cookies

  2. I am switching to gluten free diet and came across you website on http://simplysugarandglutenfree.com. Thanks for putting this recipe on there because when i made these cookies, i didn't feel icky like i do eating regular desserts or cookies. The only down side was i got two cookies out of the back and my hubby ate the rest hoping i would make more. i will be back to visit your website and my gluten free journey progresses. the cookies were easy to make and super yummy.
