oatmeal pancakes {gf}


Don't pancakes remind you of being a kid? Nothing was better than waking up on Saturday morning and shoving your sticky little face with as many pancakes as humanly possible and then parking yourself in front of Scooby Doo & Muppet Babies in a syrup induced coma.

We've healthified the typical pancake recipe and added a light strawberry topping to keep the sugar down.
(Of course then we added cool whip...but only a teeny, tiny bit...it hardly counts.) You can easily use blueberries or any other fruit for the topping. Just mix your berry of choice with a little honey, and mash them all together. No store bought syrup needed.

So these were a hit here...and no sugar coma! The only thing missing was morning cartoons.

Oatmeal pancakes
{gluten free}

{{{INGREDIENTS}}}
*1/2 cup gluten free flour (I use Bob's Red Mill all purpose gf mix)
*1/2 cup gluten free oats
*2 Tbsp melted coconut oil
*1 Tbsp honey
*1 tsp baking powder
*1/2 tsp baking soda
*1/2 tsp salt
*3/4 cup almond milk
*1 tsp vanilla extract
*1 egg

Strawberry topping= 1 cup mashed berries + 1/2 Tbsp honey

1. Heat up skillet.
2. Place all ingredients in the blender until fully mixed.
3. Let batter sit a few minutes.
4. Pour onto hot, greased skillet.
5. Flip when batter shows bubbles throughout.


Perfect for a light brunch.
