elvis cookies {gf,v}

I'm 100% sure Elvis would've loved these cookies...they've got peanut butter AND bananas. And everyone knows Elvis's favorite sandwich was pb+b. So there you go. Case closed. (I'd be such a great lawyer.)
I wanted to try a different spin on the traditional peanut butter cookie...and healthy them up, of course. So we ended up with a peanut buttery, chewy with a little crunchy, healthy, chocolaty masterpiece.
These. Are. Delicious.
I had cashews laying around for a different recipe and decided to throw them in at the last minute. So glad I did. They add a nice little crunch. These would make a great breakfast cookie if you wanted to swap the chocolate for a dried cherry or cranberry. OR, better yet, leave the chocolate chips in there.
Be a rebel...have some chocolate for breakfast. {Elvis would approve!}

Elvis Cookies
{gluten-free} {vegan}

*2 ripe bananas, mashed
*1 cup peanut butter
*1/2 cup applesauce
*1/4 cup coconut oil, melted
*1 tsp vanilla
*2 cups gluten free oats
*1/4 cup chopped cashews (or any nut)
*1 cup (or more) chocolate chips
*1/2 tsp baking powder

1. Preheat the oven to 350.
2. Mix the bananas, applesauce, coconut oil, & vanilla in a large bowl.
3. Mix in the peanut butter.
4. Add the oats, baking powder, & cashews.
5. Fold in the chocolate chips and let batter sit for 10 minutes.
6. Drop by spoonful onto greased cookie sheet.
7. Bake for 20-25 minutes or until edges start to brown.
8. Let cool 5 minutes before transferring to wire rack.

{Makes approx. 2 dozen cookies}

{I had several furry volunteers eager to help clean the bowls}

  3. Those look delicious! Love how you allowed your little pups to clean up the bowls. We have a little yorkie and it is really hard not to spoil her rotten. :)

    1. Yeah, our dogs definitely have a good thing going on here! Pretty sure they enjoyed the cookies as much as we did!
