carrot & raisin muffins {gf,v}


I'm in a breakfast rut. Nothing sounds good in the morning. Cereal? sigh. Toast? meh. Eggs? too much work. Sometimes it's just nice to grab something that you know is healthy and delish and not have to lift a finger. Enter: the carrot & raisin muffin. A little chewy. A little crunchy. With a hint of sweet & a lotta spice. They're loaded with vitamin A, protein, and heart healthy omegas. AND they're tasty. That's a lot of good stuff in one little gluten free, vegan package.

Carrot & Raisin Muffins
{gluten free, vegan}

*2 cups gluten free flour (I used Bob's red mill all purpose gf baking mix)
*1/4 cup flax seed
*1/2 cup applesauce
*1/4 cup melted coconut oil
*1-1/2 cup shredded carrots
*1/2 cup mashed banana
*1/3 cup honey (use agave for vegan sub)
*1 cup almond milk
*1 tsp cinnamon
*1 tsp nutmeg
*1/4 tsp clove
*1 tsp vanilla
*1/2 tsp salt
*2 tsp baking powder
*1 tsp baking soda
*2/3 cup raisins
*2/3 cup chopped walnuts

1.Preheat the oven to 375.
2.Combine the applesauce, coconut oil, carrots, banana, honey, milk, and vanilla in a large mixing bowl.
3.Add the flax seed to the mixture and set aside.
4.In another bowl mix together the rest of the ingredients.
5.Add the wet mixture to the dry.
6.Pour batter into greased muffin tin.
7.Bake for 20-25 min or until inserted toothpick comes out clean.
8.Let cool for 2-3 minutes before transferring to wire cooling rack.

  1. Ok, so I just switch to vegan about 4 months ago and so I've been looking for sweet stuff recipes for awhile now. These look amazing! I'll have to try it out.

  2. Can I use another oil other than coconut? I'm all out!

    1. Coconut is my favorite for muffins. Olive oil is tends to be a bit strong. Walnut or another nut oil may work. Or you could try adding another banana and/or 1/2 cup applesauce. Let us know how they turn out!
