chocolate peanut butter {gf} brownies


You know how healthy folk will make some kind of sugar free, gluten free dessert and say, "you can't even tell it's healthy...it tastes soooo good, try it." So you do. And.....immediately you regret your decision and desperately wish you didn't have taste buds...or a tounge...or a head. 

Well, I can PROMISE you...that is NOT going to happen with these beauties. These. Are. Delicious. You taste a hint of sweetness from the dates, gooey goodness from the peanut butter, and a rich chocolaty finish from the cocoa. These are dense, fudgy & so SO good. But you don't have to take my word for it,
(any reading rainbow fans?) go ahead and whip up a batch. Here are the deets:

chocolate & peanut butter brownies
{gluten-free}

{{{ingredients}}}
*1/2 cup gluten-free quick cooking oats
*1/2 cup unsweetened cocoa
*3/4 cup peanut butter
*1/2 tsp vanilla
*6 dates (make sure the pits are removed)
*1/2 cup shredded coconut
*5 oz. greek vanilla yogurt
*1/2 cup vanilla almond milk
*1 egg
*1/4 tsp salt
*1 tsp baking soda

1.Preheat oven to 350.
2.Combine the almond milk & dates in the blender & mix on high until smooth.
3.Add the rest of the ingredients, except peanut butter. Blend until smooth.
4.Add batter to greased 8x8 pan.
5.Heat up the peanut butter in the microwave for approx 40 seconds until melted.
6.Drizzle the melted peanut butter into the pan and use a knife to swirl into the batter.
7.Bake for 20-25 minutes or until inserted toothpick comes out clean.
8.Allow to completely cool before serving. (I threw mine in the fridge)
