chocolate & coconut chia pudding

I'm just going to put it out there: Chia is the new flax seed. There, I said it. If your only knowledge of the chia seed is from the 80's, crazy sprout growing ch-ch-ch-chia pet, you are missing out! Chia seeds are super high in Omega 3's (higher than flax), fiber, antioxidants, and a slew of other nutrients. They don't need to be ground in order for the body to absorb all their nutrients (like flax seeds). And as if that weren't enough, they don't deteriorate and go rancid (like flax seeds).   

So what to do with these little guys? They are great sprinkled over oatmeal, or mixed into baked goods, but my favorite...pudding. Chia seeds have the unique property of absorbing liquid and becoming super plumpy, so you don't need weird additives or gelatin to create deliciously rich & tapioca-like pudding. This recipe is ridiculously easy and sooooo good.

chocolate & coconut chia pudding 
{gluten-free, vegan}

*1 cup almond milk
*1/3 cup dried cherries
*1/3 cup shredded coconut (plus a few pinches for a garnish)
*1/4 tsp vanilla
*1 Tbsp cocoa
*2 Tbsp chia seeds

1.Combine the almond milk, cherries, coconut, vanilla, & cocoa into blender or food processor.
2.Blend on high until smooth.
3.Add blended ingredients to a mason jar (or any jar with a lid) and add in chia seeds.
4.Close lid tightly and shake.
5.Refrigerate 4 hours or overnight.
Serves 1-2
