asparagus & goat cheese frittata



We had a lovely lazy Sunday yesterday. Don't you love those days with nothing to do and nowhere to go? Our day consisted of: lounging, fixing stuff to eat, & eating (on repeat). One of our eats was this super yummy frittata. I'm calling it a "frittata" for lack of a better word...but since we didn't have a cast iron skillet big enough to fit all the goods...it's really more of an egg bake. But equally as tasty.

We kept this dish low fat and super healthy (without sacrificing any flavor) by using lots of fresh veggies and the best cheese ever: goat. I love pairing goat cheese with eggs because not only is the combo a creamy, heavenly masterpiece, but since goat cheese is on the stronger side, you don't need very much. (read: healthier for the waistline) Something else we did to keep this dish on the lighter side, was to use greek yogurt instead of the traditional sour cream or milk. The results were pretty stellar. A light, fresh brunch/anytime option.

asparagus & goat cheese frittata

{{{ingredients}}}
*5 eggs
*1 sweet potato, diced
*5-6 cherry tomatoes, cut in halves
*1 cup of sliced mushrooms
*6 oz greek yogurt
*6-7 stalks of asparagus, chopped (leave 2 whole for garnish)
*half of a yellow onion, diced
*1/4 cup goat cheese crumbles
*1/4 tsp salt
*2 tbsp olive oil

1.Preheat oven to 425.
2.Saute onions, potatoes, mushrooms, & asparagus in olive oil for about 10 min.
3.While veggies are cooking, whisk together eggs, yogurt & salt in medium bowl.
4.Transfer veggies to bowl with egg mixture & lightly mix.
5.Pour mixture into greased baking dish. We used a 9" round.
6.Arrange cherry tomatoes and asparagus on top.
7.Sprinkle with goat cheese.
8.Bake for approx. 20-25 min. or until edges are browned and slightly pulling away from edge.
9.Let cool for 5 min before cutting.

Serves 4-6.
